Se déroulant autour de la médina, les remparts, flanqués de tours rondes et de bastions, sont percés de plusieurs portes. Construits en briques cuites et partiellement en tabia, ils s’élèvent à une hauteur entre 4 et 8m et sont couronnés de merlons arrondis. Ils sont flanqués de vingt tours rondes et de bastions polygonaux et rectangulaires, destinés à accueillir des pièces d'artillerie. Les portes, dont certaines sont de forme rectangulaire, sont encadrées de plaques de pierres inscrites chacune dans un arc brisé outrepassé posé sur deux colonnes. Chaque colonne est surmontée d’un chapiteau recevant une imposte et un abaque à corniche en chanfrein. L’arc est cerné d’un cadre rectangulaire souligné dans sa partie supérieure par des corbeaux.
Le répertoire décoratif se limite aux motifs épigraphiques et végétaux. Sculpté dans les parties supérieures des colonnes des portes le décor végétal, caractéristique du répertoire décoratif du XIe siècle, se présente sous forme de rinceaux entrelacés desquels se détachent des palmettes inscrites dans un bandeau. Ce type de décor est attesté sur les chapiteaux antiques, où il prend la forme de feuilles d’acanthe, ainsi que sur les chapiteaux hafsides, où apparaissent des motifs de feuilles lisses. Quant au décor épigraphique, il est localisé sur le fût des colonnes, où sont sculptés en relief des caractères kufiques fleuris dont les hampes s’achèvent par des ramifications végétales en palmettes polylobées, caractéristiques du répertoire décoratif fatimo-ziride. La graphie naskhi est sculptée sur les panneaux commémoratifs.
Les remparts de Kairouan offrent un exemple caractéristique de muraille ifriqiyenne réalisée en briques pleines, réaménagée à l'époque moderne et contemporaine pour s'adapter aux techniques de défenses militaires, comme ce fut le cas pour les remparts et la qasaba de Sousse, édifiés au IXe siècle puis sans cesse complétés et réaménagés au cours des siècles.
L'emploi de la tabia, un mélange bien compressé de chaux, de sable et de gravier, constitue une technique de construction très utilisée dans les édifices maghrébins, ce depuis l'époque almohade. Ce matériau fut utilisé pour l’édification des murailles de Rabat (Maroc, règne du calife al-Mansûr, 1184-1199) et de la qasaba de Chefchaouen (Maroc, début XVIe siècle, époque wattasside, par le shérif Moulay Mohamed Ibn Ali Ibn Rachid).
