Coiffé d’un haut couvercle avec bouton de préhension, ce pot proviendrait des ateliers de Safi, ville portuaire de l’Atlantique, ainsi que l’atteste une inscription figurant sous la base. Des bancs d’argile de bonne qualité, proches de la ville, seraient à l’origine de cette poterie qui aurait été lancée par des artisans venus de Fès - d’où les étroites ressemblances entre les deux productions. Comme l’Espagne, les pays du Maghreb ne connaissent que les pâtes argileuses, avec, le plus souvent une glaçure opaque qui reçoit un décor peint : c’est l’exacte définition de la faïence.
Le décor en bleu et blanc se condense à la jonction du pot et du couvercle. Il est composé de lambrequins à fond moucheté enfermant dans leurs découpes des cercles et des amandes garnis de résilles. Un petit bouton fleuri s’inscrit dans les espaces laissés en blanc. Le décor aéré, le fond encore lisible, le bleu cobalt léger, probablement mêlé de nickel, tous ces traits caractérisent les anciennes productions de Safi et de Fès au tournant des XVIIIe et XIXe siècles.
Quant au mot jobbana qui désigne ce type de pot - curieusement proche des pots à gingembre chinois - il provient de l’arabe jben : « le fromage ». A l’origine, ces récipients à couvercle étaient utilisés pour faire cailler le lait. On les utilisait aussi pour conserver le beurre ou la harira, la soupe avec laquelle on rompait le jeûne, pendant le mois de Ramadan. Les ateliers de Safi et de Fès s’étaient spécialisés dans la production de cette vaisselle adaptée à la riche cuisine marocaine. A côté du jobbana, on trouve le ghotar et le tobsil, plats circulaires pour la pastilla (une sorte de mille-feuilles), le khabia, grande jarre couverte pour les viandes confites, le mokhfia, plat conique pour le couscous, le ghorraf, le pichet, le zlafa, le grand bol sur piédouche pour le bouillon et les légumes, etc. Cette vaisselle est soit de type « bleu et blanc », soit à décor polychrome, souvent rehaussé de points au minium.
Tout ce matériel destiné à protéger et à présenter les aliments, mais également à décorer les intérieurs, rappelle bien entendu les usages domestiques de l’Europe. Le rapprochement s’impose d’autant plus que ce pot à couvercle, paré de son léger décor à effet de dentelles, paraît imiter les « bleu et blanc » de Séville et de Delft, ou s’inspirer de motifs élaborés dans l’Italie de la Renaissance.
