Les céramiques témoignent des contacts, devenus récurrents à l’époque médiévale, entre Byzance et l’Islam, au sein d’un vaste réseau d’échanges. Il peut s’agir soit d’artefacts islamiques importés et mis au jour sur des sites byzantins, soit de pièces de vaisselle byzantine dont les principes de conception sont étroitement liés aux traditions du monde islamique.
Il est plus rare de retrouver la trace d’un four de tradition islamique sur le territoire byzantin. C’est pourtant le cas à Serrès, ville de Grèce du Nord, où des fouilles ont mis au jour certains éléments qui attestent de la présence d’un four à barres d’enfournement, caractéristique du monde islamique et datant du milieu du XIIIe siècle. L’existence d’un atelier de potiers à Serrès, et plus précisément dans notre cas, d’un four à barres, est attestée par la découverte d’objets servant à l’empilement des céramiques dans le four et au processus de cuisson. Il s’agit de barres d’argile, d’où la dénomination du « four à barres », d’environ 3,5 cm de diamètre, fixées en rangées dans des trous et couvrant l’ensemble des parois du four. Ce dispositif avait pour but de former un rayonnage sur lequel les céramiques étaient déposées pour le temps de la cuisson. On pouvait également y suspendre les vases ayant une forme plus fermée. Des éléments en argile de forme sinueuse, mais d’un diamètre inférieur à celui des barres mentionnées précédemment, ont également été retrouvés sur le site de Serrès. Ils servaient probablement à suspendre dans le four des objets de plus petite taille, à moins qu’ils n’aient été placés entre les vases glaçurés pour éviter que les surfaces vitreuses ne se collent les unes aux autres. Ces derniers éléments sont connus sur d’autres sites byzantins comme celui de Corinthe mais également sur des sites d’Iran et d’Ouzbékistan. Des barres en argile similaires ont été retrouvées sur plusieurs sites en Orient à l’occasion de fouilles de fours de poterie islamique, notamment à Takht-i Suleyman et Nishapur en Iran, ou encore à Afrasiyab en Ouzbékistan.
Bien que ce four à barres soit de tradition islamique, les céramiques de Serrès sont des productions byzantines. Depuis la reconquête byzantine sur les territoires latins au cours de la deuxième moitié du XIIIe siècle par Michel VIII Paléologue (1259-1282), Serrès était devenue une ville prospère. Elle avait acquis une plus grande importance en retrouvant sa position de capitale du thème de Serrès et Strymon, et produisait sa propre céramique, qui peut effectivement être datée de la deuxième moitié du XIIIe siècle. Il s’agit d’une céramique à décor de sgraffiato, glaçurée avec des rehauts de brun-jaune et de vert[1].
