La tour Saint-Martin fut construite durant l’apogée de l’art mudéjar aragonais, à la fin du XIVe siècle. Malgré la conquête précoce du territoire d’Aragon par les chrétiens, de la fin du XIe à la moitié du XIIe siècle, (1096 Huesca, 1118 Saragosse, 1120 Calatayud…), l’art mudéjar y reste très présent. Après l’occupation chrétienne, les premiers édifices construits sur ce territoire étaient fortement influencés par l’art occidental européen, principalement de style roman d’influence française. Néanmoins, après cette première phase c’est l’art mudéjar qui va s’imposer dans la région, en raison d’une part du manque de pierres et d’autre part de l’absence de main d’œuvre sachant tailler la pierre. C’est de l’argile et du plâtre que l’on trouve sur ces terres, qui fournissent le matériau utilisé pour la plupart des constructions mudéjares : la brique, la céramique et le plâtre.
Les éléments ornementaux de l’art mudéjar aragonais trouvent leurs racines dans la tradition hûdide de l’Aljaferia de Saragosse. Les tours, principalement celles de grande taille, reprennent la structure de la Giralda : constituée de deux tours emboîtées séparées par un escalier, la tour intérieure étant divisée en plusieurs pièces. C’est aussi le cas de la tour Saint-Martin, à l’intérieur de laquelle se superposent trois salles couvertes de voûtes nervurées en brique. À ce type de tour correspondent celles de la Madeleine à Saragosse, celle d’Ateca (province de Saragosse), du Salvador (province de Teruel) et de Saint-Martin à Teruel.
Le principal intérêt de la tour Saint-Martin réside autant dans sa structure, semblable à celle des minarets almohades surmontés d’un lanternon, que dans sa décoration de céramique et de briques en relief : grands panneaux d’étoiles à huit branches, frises d’arcs recticurvilignes et d’arcs polylobés.
Cette décoration est très fortement influencée par la Giralda de Séville. La tour est donc à mettre en lien avec les minarets almohades comme ceux de la Kutubiyya de Marrakesh ou la tour Hasan de Rabat. L’art almohade et les caractéristiques locales se mêlent, faisant dire à G. Borrás Gualis que « l’aura almohade a agi comme un dynamiseur sur les traditions locales, qui accusaient un retard du point de vue de l’ornement et qui ont alors commencé à se rénover, sans oublier ses propres racines. »
Une des caractéristiques de l’art mudéjar d’Aragon est l’usage de la céramique dans l’architecture. Sur cette tour, des carreaux de revêtements vert et blanc rehaussent les étoiles à huit branches, les plinthes et les fûts des colonnes… L’épais contrefort de pierre du flanc sud-ouest provient de la réparation complexe effectuée par l’architecte Pierres Vedel.
